The mead is clear, having spent over a year on the riddling rack. Some tiny bubbles are present though not what we hoped for. The legs are numerous because of the high alcohol content.
A unique aroma of fermented honey, which needs to be experienced.
Though dry, the palate actually taste sweet to some people. The delicate flavour of the honey come through, with a hint of maple.
Maybe try it with some equally ancient food, like Haggis.
